As supermarkets have shortages of flour and eggs, I have been ordering certain products from the suppliers or manufacturers, including the postage.
This address is on the back of the flour packet which I will also try: Allison’s Flour, Western House, Lynchwood, Peterborough PE2 6FZ or www.allinsonflour.co.uk
I thought this Wartime recipe appropriate just now:
Eggless Cake
8 oz flour
2 oz sugar
2 oz Margarine
3 oz currants
1 level tsp bicarbonate of soda
1 level tsp spice
pinch salt
1/4 pt milk
1 tblsp vinegar.
Method
Sieve flour with salt, bic of soda and spice.
Rub in fat.
Add sugar and currants.
Stir in the milk gradually.
When milk is well beaten in, add vinegar, little by little, to prevent curdling.
Then bake.
Temp: 170oC
Time: 35 mins or check this as my oven differs.
